We love dry beer at Halcyon, so making a Brut I.P.A. was right up our alley. We allowed for two full months of barrel fermentation with our house mix of brett to create a drying effect without enzymes, then dry-hopped with mosaic for an aromatic matrix of berries, fruit and funk.
Wintermute Brut I.P.A. draws on our core brett I.P.A. malt profile, but is refined to produce the reduced body and sweetness that's characteristic of the Brut I.P.A. style. Each barrel of Wintermute is singly fermented, then united for a blend that is the sum total of the works.
Wintermute pours a slightly hazy orange-gold. The aroma is a kaleidoscope of berries and tropical fruit, with additional barnyard and grassy, fresh hay undertones rounding it out. The flavour is fruity with restrained bitterness and a mingling of wine. The bottle conditioning and barrel-drawn tannins add a perception of body to a mouthfeel that is otherwise quite light and dry.
