We love dry beer at Halcyon, so making a Brut I.P.A. was right up our alley. We allowed for two full months of barrel fermentation with our house mix of brett to create a drying effect without enzymes, then dry-hopped with mosaic for an aromatic matrix of berries, fruit and funk.
Organic cherries are up as the feature fruit in this third rendition of Halcyon's Shifting Sands. The base sour gold is aged in red wine barrels from six to twelve months. A select blend of these barrels was then aged on both tart Montmorency variety and dark sweet cherries for another six months. This one's all cherry.Read More
