Halcyon Barrel House has bottled Curse of Knowledge, its organic farmhouse saison, for wider distribution in Ontario and Québec. Curse of Knowledge is a barrel-fermented, blended farmhouse saison with brett. Spice and more delicate herbal, fruity and floral elements are rounded by its relationship with wine. It’s almost magically both effortlessly drinkable, and assumingly complex. Previously available on draft and from the brewery only, it will now be available in 500 ml bottles at retailers in Ontario and Québec.

We love dry beer at Halcyon, so making a Brut I.P.A. was right up our alley. We allowed for two full months of barrel fermentation with our house mix of brett to create a drying effect without enzymes, then dry-hopped with mosaic for an aromatic matrix of berries, fruit and funk.

Shifting Sands: Cherry

Organic cherries are up as the feature fruit in this third rendition of Halcyon's Shifting Sands. The base sour gold is aged in red wine barrels from six to twelve months. A select blend of these barrels was then aged on both tart Montmorency variety and dark sweet cherries for another six months. This one's all cherry.

Halcyon Barrel House has bottled Echo Chamber, its organic dry-hopped sour, for wider distribution in Ontario and Québec. Slightly tart and refreshingly sour, Echo Chamber is aged in red wine barrels for 3-6 months, then blended and dry-hopped with Idaho 7 and Cryo Ekeunot varieties. Previously available on draft and from the brewery only, the approachable 4.8 % sour will now be available in 500 ml bottles at retailers in Ontario and Québec.
