Infinity Mirror is an India Pale Ale (I.P.A.) that is fermented with wild yeast, and aged in red wine barrels. This hop-forward ale features organic Amarillo, Nelson Sauvin and Centennial varieties, and packs in a healthy dose of classic brett funk.
Infinity Mirror is brewed using barley malts, as well as oats and wheat. It is fermented with brewer’s yeast as well as multiple strains of brettanomyces, and is a blend of batches aged 1-3 months in red wine barrels.
Infinity Mirror pours a hazy orange-gold with a lively head of foam. Tropical fruit aromas with hints of citrus and brett-influenced funk are at play, along with a touch of wine. Flavours are of ripe fruit, funk and red wine, with playful carbonation, restrained IPA bitterness, and a dry finish.
